Rava Laddu / Rava Ladoo / Semolina Laddu

 

Rava laddu is one of the the simplest, easiest and tastiest recipe prepared at home. Almost familiar all over India, this laddu is used as dessert and considered an energy booster for kids. Overall a wonderful recipe which would be liked by everyone.




Basic Information:

Preparation Time: 30 minutes
Makes: 15-17 laddus

Ingredients:
Rava / Semolina / Suji  - 1 cup
Granulated Sugar - 3/4 cup
Grated Coconut - 1/2 cup
Milk  - 1/2 cup or as required
Cashew Nuts - 15 Nos + extra for decorating
Raisins - 10 Nos
Cardamom Powder - 1/2 teaspoon
Ghee - 3 tablespoons


Method:

1) Choose a wide pan and heat 1 tablespoon of ghee.
2) Add roughly chopped cashew nuts and raisins. When cashews turn golden brown and the raisins start blowing up, remove them from the pan.
3) To the same pan, add remaining ghee. Add rava, roast it until the aroma comes. Once roasting is complete, allow it to cool down. Make sure not to change the colour of the rava. It should look grainy and slight golden colour. Transfer to a plate and allow it to cool.
4) Add grated coconut to the pan and roast them well.
5) Make sure all the above are done in low flame of stove.
6) Blend the Rava into half fine powder and then blend the sugar into powder.
7) Mix rava, sugar, cardamom powder, cashew nuts and raisins together in a mixing bowl.
8) Now boil the milk and add it to the mixture slowly.
9) Each time when you add milk to the mixture, check whether you are able to make laddu's out of it. It is enough to add only the required amount of milk each time.
10) Shape the laddu's to uniform size with your hand,decorate it with one cashew nut for each laddu. Now, it is ready to eat.

 Notes:

1) Instead of milk, you can add ghee and make laddus for long shelf life. If you add more milk to the rava mixture, you can laddus out of it, but they won't hold its shape. So, take extra care when you are adding milk. 
2) You can also skip coconut.
3) Usually, I add 1 cup sugar for 1 cup rava. Since TH doesn't like sweet much, I only added 3/4 cup of sugar. You can reduce or increase it according to your preference.
